She used to make it from scratch, but my version takes a few shortcuts. It has been a mainstay for our mornings together as a family. This recipe is my family’s favorite combo, but I sometimes use breakfast sausage instead of bacon. It combines the spices of the Southwest with the comfort of a hearty breakfast. With ham, eggs and plenty of cheese, the enchiladas are flavorful, hearty and fun. It’s a favorite for breakfast or brunch but it can be enjoyed for lunch or supper, too.
